Pilau Inspired Fried Rice
Pilau rice is one of those recipes I learnt to cook later on in my cooking life. I was so used to cooking and eating plain boiled rice that I didn't feel the need to learn how to make pilau or fried rice. However whenever I visited friends or attended a community function, there were always fried, jolof or pilau rice which tasted delicious. In fact the children loved them even more. Therefore, I decided to take time to learn and make them so that we don't only eat them outside our home.

A large saucepan
A chopping board

Spatula
A ladle
- 4 cups Basmati Rice
- 1 cup Mixed Vegetables
- 2 tbsp Cooking Oil
- 1 tsp Ground Black Pepper
- 1 tbsp Salt
- 1 tsp Coriander Seeds
- 1 tbsp Cloves
- 3 Stars
- 3 Bay Leaves
- 3 medium Onions
Boiling The Rice
Add 6 cups of water in the rice
Bring to the boil, cover and cook for 10 minutes
Fry the onions
Add the mixed vegetables
Mix well
Add the fried onions in the rice and cover
Add the coriander seeds, stars, bay leaves and fry lightly in the same onion saucepan
Add two cups of water and cover the saucepan
Allow the mixture to infuse for 5 minutes
Strain the liquid in the rice and mix well
Cover the saucepan and cook the rice for further 10 minutes
Serve with stewed meat, beans, chicken or any of your favourite sauce
