Pilau Inspired Fried Rice

Pilau rice is one of those recipes I learnt to cook later on in my cooking life. I was so used to cooking and eating plain boiled rice that I didn't feel the need to learn how to make pilau or fried rice. However whenever I visited friends or attended a community function, there were always fried, jolof or pilau rice which tasted delicious. In fact the children loved them even more. Therefore, I decided to take time to learn and make them so that we don't only eat them outside our home.

Equipment

  • A large saucepan
  • A chopping board
  • kitchen knife
  • Spatula
  • A ladle

Ingredients
  

  • 4 cups Basmati Rice
  • 1 cup Mixed Vegetables
  • 2 tbsp Cooking Oil
  • 1 tsp Ground Black Pepper
  • 1 tbsp Salt
  • 1 tsp Coriander Seeds
  • 1 tbsp Cloves
  • 3 Stars
  • 3 Bay Leaves
  • 3 medium Onions

Instructions
 

Preparation

  • Chop up the onions
  • Lay out all ingredients on worktop
  • Wash rice until the water runs clear

Boiling The Rice

  • Add 6 cups of water in the rice
  • Bring to the boil, cover and cook for 10 minutes
  • Fry the onions
  • Add the mixed vegetables
  • Mix well
  • Add the fried onions in the rice and cover
  • Add the coriander seeds, stars, bay leaves and fry lightly in the same onion saucepan
  • Add two cups of water and cover the saucepan
  • Allow the mixture to infuse for 5 minutes
  • Strain the liquid in the rice and mix well
  • Cover the saucepan and cook the rice for further 10 minutes
  • Serve with stewed meat, beans, chicken or any of your favourite sauce
