Pilau Inspired Fried Rice
Pilau rice is one of those recipes I learnt to cook later on in my cooking life. I was so used to cooking and eating plain boiled rice that I didn't feel the need to learn how to make pilau or fried rice. However whenever I visited friends or attended a community function, there were always fried, jolof or pilau rice which tasted delicious. In fact the children loved them even more. Therefore, I decided to take time to learn and make them so that we don't only eat them outside our home.
Equipment
- A large saucepan
- A chopping board
- kitchen knife
- Spatula
- A ladle
Ingredients
- 4 cups Basmati Rice
- 1 cup Mixed Vegetables
- 2 tbsp Cooking Oil
- 1 tsp Ground Black Pepper
- 1 tbsp Salt
- 1 tsp Coriander Seeds
- 1 tbsp Cloves
- 3 Stars
- 3 Bay Leaves
- 3 medium Onions
Instructions
Preparation
- Chop up the onions
- Lay out all ingredients on worktop
- Wash rice until the water runs clear
Boiling The Rice
- Add 6 cups of water in the rice
- Bring to the boil, cover and cook for 10 minutes
- Fry the onions
- Add the mixed vegetables
- Mix well
- Add the fried onions in the rice and cover
- Add the coriander seeds, stars, bay leaves and fry lightly in the same onion saucepan
- Add two cups of water and cover the saucepan
- Allow the mixture to infuse for 5 minutes
- Strain the liquid in the rice and mix well
- Cover the saucepan and cook the rice for further 10 minutes
- Serve with stewed meat, beans, chicken or any of your favourite sauce
