This amazing recipe is once again another delicacy I enjoyed eating in Uganda, my Motherland. When travelling from the North towards the Capital City Kampala, or from any town at all to the another. You find business men, women, children, roasting and selling them at the roadside. It always made the journeys such a delightful experience!When I came to the UK and discovered I could actually get plantains and make them for the family, I was very very happy. Now I had the job of introducing my Ugandan delicacy to my British born children. Not all of them were for it but, with persistence and patience, I managed to get them all to enjoy eating plantain. They prefer fried plantain to the boiled ones but fried plantain at the moment in our household, is the winner.
