Fried, Roasted & Salted Groundnuts

Peanuts have always been one of my favourite snacks. Growing up in the village, I participated in planting, weeding, harvesting, drying, storing in granaries as well as eating them. We use peanut butter in most of our Ugandan, Acholi dishes. I introduced it to my children and they absolutely love it. Just remember that peanuts have high levels of protein and fat. Therefore, eat in moderation.

Equipment

  • 1 Saucepan
  • 1 Fork
  • 1 Roasting tray

Ingredients
  

  • 500 g Peanuts (any type)
  • 1 tsp Salt
  • 6 tbsp Water

Instructions
 

Preparation

  • Pour out peanuts in a large tray
  • Pick out any rotten, split or shrivelled ones

Frying

  • Pour the peanuts into the saucepan
  • Add salt and water
  • Wash your hands and mix them thoroughly until the salt is melted
  • Place the saucepan on the cooker and turn the fire on
  • Mix gently with the fork until the water dries out

Roasting

  • Turn the peanuts over to a large roasting tray
  • Level out well and put in the oven, gas Mark 6 or 200 degrees in electric oven for 20 to 30 minutes or until peanut turn golden brown when you remove the skin
  • Keep checking every 5 minutes and mixing
  • Take a few out and taste. Warning! Don't burn your tongue, cool it a little by blowing or putting it in a saucer for a minute before tasting.
  • Take it out of the oven, allow it to cool before serving.
  • You can have them with tea, coffee, juice, water, or snack on them as you please.
