The BEST Beef & Aubergine Stew - How to Make A Simple But Delicious Hearty Stovetop Meat & Vegetable Versatile Dish.
Growing up in the village, we didn't eat much meats but mostly vegetables. Most children genuinely prefered heavier meals such as, yellow peas sauce with sweet potatoes, or millet bread, gungu peas mixed with peanut or sesame butter because, it fills them up for longer.
Besides, beef was quite expensive to buy for a large family. We ate meats mainly during Christmas, Easter and whenever my Mum called out people to work in her fields. Therefore, we didn't develop any attachment to meats, especially beef.
In my own family, we eat beef once in a while as we prefer to eat more chicken and fish instead. However on this particular day, I desired to eat proper beef stew and I knew the family members would embrass the idea. Therefore, I went out and got all the ingredients I needed.
It turned out to be one of the best beef stew we have ever eaten. When you don't eat something too often, you can truly enjoy it when you finally get your hand on it again.
We ate this dish with sweet potatoes and malakwang. Absolutely delicious!

Equipment

  • 1 medium sized saucepan
  • 1 wooden spoon
  • 1 Chopping board
  • 1 kitchen knife
  • 1 laddle for serving the stew

Ingredients
  

Meat Stew

  • 1 kg lean beef
  • 3 medium sized onions onions
  • 3 tbsp cooking oil
  • 1 tsp curry powder
  • 1 tbsp salt
  • 1 tsp ground black pepper
  • 2 tins Chopped Tomatoes
  • 3 medium carrots
  • 1 whole auborgine
  • 1 whole bell pepper

Boild Sweet Potatoes

  • kg Ugandan sweet potatoes
  • 1 l water

Instructions
 

Meat Stew

  • Wash and cut up all the vegetavles
  • Place saucepan on the hot stove and eat up the oil
  • Add the onions and fry until golden brown
  • Add curry powder, mix a little and add the tomatoes immediately
  • Add the black pepper and salt, and mix well
  • Cover the saucepan and cook the tomatoes until the sauce thickens for 15 minutes
  • Keep checking and mixing to prevent the sauce sticking to the bottom of the pan and burning
  • Add the meat, mix well and cover
  • Allow it to cook in the tomato sauce for 30 minutes
  • Check and mix
  • Once sauce has thickened, add two cups of hot boiled water
  • Cover and cook for a further 30 minutes
  • Add all the vegetables and cook for 15 minutes
  • Mix and simmer for 15 minutes
  • Serve with your boiled sweet potatoes and favourite vegetable such as malakwang
