How To Boil Sweet Potatoes
Sweet potatoes are my childhood root vegetable which I used to plant and grow in my village. It is always best eaten with malakwang. Other sauces such as peanut sauce (binyewa), stews of any kind are great too. Some of my children enjoy eating it, some don't. It could be because I didn't introduce it early enough to the ones that don't. However, they still eat the Jamaican sweet potatoes, especially when roasted in the oven.
Equipment
- A large saucepan with lid
- A kitchen knife
- Chopping board
Ingredients
Fresh Sweet Potatoes
- 1 litre water
Instructions
Preparation
- Fill the saucepan halfway with cold water
- Peel the sweet potatoes and put them in the saucepan
- Scrape or cut out any dark spots and wash thoroughly
- Cut them to desired sizes
Boiling The Sweet Potatoes
- Add hot or cold water into the saucepan, covering the potatoes halfway
- Cover the saucepan with lid and boil for 25 minutes
- Test the softness of the potatoes by poking one or two of them with a skewer of a knife
- Serve with your favourite sauce
