How To Make Ugandan Mandazi | Easy Recipe, Method & Softest Results (Best Fried Dumplings)

Arriving in the UK for first time, I never knew how to make mandaziS. However, through visiting friends and relatives who knew how and asking them questions, I started implementing. There were a lot of failures along the way but, eventually, I got to that place where I could confidently and truly make delicious mandaziS. That is what I would like to show you; and hopefully, you become a better mandazi maker than I am.

Ingredients
  

Ugandan Mandazis
  • 1.5 kg self-raising flour
  • 250 grams sugar
  • 250 grams Baking margarine
  • 2 litres cooking oil
  • 2.5 cups water

Equipment

  • A large saucepan
  • A weighing scale if need be
  • A clean tea towel
  • A large frying pan/wok
  • A perforated serving spoon
  • A rolling pin
  • A knife
  • A large tray
  • Kitchen tissue

Method
 

Preparation
  1. Weigh out the Flour, margarine and sugar
  2. Add them in the saucepan
  3. Crack the eggs and add in the pan
  4. Mix everything together
  5. Start adding the water slowly in the middle
  6. Once the flour and everything come together, turn it onto a clean and dry worktop
  7. Knead for 5 minutes or until the dough doesn't stick to your hands anymore
  8. Pinch a piece and test if it is easily breakable - if too soft and elastic, add more flour knead some more
  9. Put it back in the saucepan and cover with the tea towel
  10. Leave it to rise for 45 minutes.
Frying The Mandazis
  1. Turn your cooker on and heat up the oil in a frying pan for 2 minutes
  2. Roll out the dough and cut them in medium size pieces
  3. Test the oil temperature by placing one raw mandazi piece into the oil. It should make some sizzling sound
  4. Add the rest of the pieces
  5. Allow one side to brown before turning over the other side
  6. Adjust temperature accordingly. Don't let them brown too fast as the middle will not cook well and avoid low temperature because, the mandazis will absorb too much oil.
  7. Once golden brown, take them out and place on a large tray or container with a kitchen tissue in place to absorb the oil
Eating and storing Mandazis
  1. You can eat your mandazis with your favourite cup of tea or juice
  2. Eat with bean stew or any other meat and vegetable stews
  3. You can eat it as a snack by itself
  4. Mandazis can be stored in a cool dry place, in an airtight container for up to 5 days
  5. Keep refrigerated for 7 days
  6. Can be frozen for up to 2 months and reheated from frozen in a microwave for 1 minute
