Tuna & Vegetable Pasta Bake | Easy & Delicious Recipe
The first time I tasted pasta was when I was studying in an Italian nursing School. They used to cook for us plain boiled pasta with four main ingredients - pasta, water, salt and cooking oil. Pasta was really not my favourite but over time, I grew to enjoy it. The children however, having been born and raised in the UK, always enjoyed eating pasta dishes. I have been trying different pasta dishes and this particular one, is the family's favourite.
Equipment
- 2 large saucepans
- Chopping board
- kitchen knife
- wooden spoon
- Draining spoon/ladle strainer
- A large roasting dish
Ingredients
Tuna & Vegetable Pasta Bake
- 1 kg pasta
- 2 tins tuna
- 3 medium onions
- 3 carrots
- 1 courgette
- 1 tin chopped tomatoes
- 1 tin garden peas
- 500 g pasta sauce
- 2½ bell peppers
- 300 g mild cheddar cheese
- 1 tsbp curry powder
- 1 tsp ground black pepper
- 2 tbsp cooking oil

Preparation
- Chop up all the vegetables and set aside
The Vegetable Sauce
- Heat up the oil in the pan
- Add onions and fry for appx 5 minutes or until golden brown
- Add curry powder, mix and add tomatoes immediately
- Add black pepper and mix well
- Add 1 cup of hot boiling water in the pan
- Cover and cook for 10 minutes or until the sauce thickens
- Add the pasta sauce mix and cook for a further 5 minutes
- Add all the vegetables and cook for 5 minutes
- Add salt
- Cover the saucepan and cook for 5 minutes
- Test to make sure the salt is enough and the vegetables are cooked
- Add the tuna to the sauce
- Add the green peas
- Add the pasta to the sauce or the sauce to the pasta and mix well
- Scoop it out into a large roasting dish
- Grate the cheese and sprinkle over the pasta mix
- Bake in the oven, gas mark 6 for 25 to 30 minutes or until golden brown
- Serve with fresh vegetable salad of your choice
Plain Boiled Pasta
- Place pasta in a large saucepan
- Add hot boiling water until it covers the pasta
- Add a tablespoonful of salt and mix well
- Do not cover the saucepan as pasta tends to boil over, but keep turning every now and again with draining spoon for even cooking
- Cook until it softens
- Drain out the water from the pasta and set aside
